Buffalo Cauliflower Wings
Cauliflower buffalo wings that are so tasty, you will forget they are not chicken!
1 head of cauliflower, cut into pieces
½ cup Buffalo Sauce (I use Sweet Baby Ray’s)
1 cup flour
1 cup panko flakes
1 tsp thyme
1 tsp salt
1 tsp pepper
1 tsp Cajun seasoning, paprika, or chili powder
½ cup water
1-2 cups Avocado oil for frying
1 large skillet
1 large, metal slotted spoon or spider wok
Metal tongs
Diced green onion (optional)
Wet Batter:
Mix seasoning, flour, and add water in a medium size bowl in small increments. You want the paste to be a little thick but not too soupy. Mix until well blended.
Dry batter:
Put panko crumbs into medium bowl. You can add a little extra black pepper to the panko, if you like.
Pour oil into hot skillet and heat skillet at medium. Give it a couple minutes for the oil to heat up.
Submerge cauliflower into wet batter and use tongs to retrieve cauliflower, tapped gently on the side of the bowl to remove excess batter.
Next, put cauliflower into the panko mixture until evenly coated. Add to the hot oil in the skillet. Cook for a couple minutes until light- medium brown, turning as necessary. Use the spider wok or slotted metal spoon to remove from hot oil, placing on a plate with a paper towel underneath to capture excess oil.
Once all the cauliflower is prepared, transfer into a large bowl, pour buffalo sauce over the cauliflower, toss, top with green onions and serve immediately!
