Vegan Blueberry Banana Oat Bread
1 1/4 cup rolled oats (I use Bob’s Red Mill)
1 1/4 cup flour
1/3 cup turbinado or cane sugar
1/2 teaspoon baking soda
2 teaspoon baking powder
3 medium, ripe bananas, mashed (a little over one cup)
1/4 cup unsweetened Macadamia milk (or your favorite plant milk)
1 cup fresh blueberries (can also be frozen)
1/4 cup filtered coconut oil, melted (olive oil or grapeseed oil work great as well)
1 teaspoon of vanilla
1 teaspoon cinnamon
pinch of nutmeg
pinch of salt
Preheat oven to 350 degrees
Grease 5 x 9 loaf pan with oil
Mix dry ingredients first
Add oil and milk to combine. Do not overmix
Gently fold in blueberries, our batter into loaf pan
Bake for approximately 45-55 minutes or until top is golden brown and toothpick placed in the center of bread comes out clean.
Let cool for at least 10 minutes.
Tilt the pan and the bread should come right out. Slice and serve immediately. with or without plant butter
